Stuck for something easy to make that the whole family will love? I was too, so I found some chicken in the freezer and some veg in the fridge, added a couple of store cupboard staples and threw this Slimming World pasta recipe together. It was delicious! And there are plenty of little tweaks you could make to it to change the flavours.
Pasta is one of the kids’ favourites, and this is a great way to sneak a bit of extra veg into their diet, as if you dice it small enough, they might not notice!

Rainbow Chicken Pasta Bake - Slimming World Pasta Recipe
This delicious family pasta dish is full of colourful veg and is so easy to make! It's syn free (if using cheese as your Healthy Extra 'a' choice) and you can swap any of the veggies as you prefer! If not using cheese as your Healthy Extra, please check how many syns you use depending on the type of cheese.
Dice the chicken into bite-sized pieces. Spray oil into a non-stick pan and fry the chicken over a medium heat until sealed.
Once sealed, add the diced onions and peppers and the crushed garlic and fry until softened slightly.
Add the tomatoes, stock cube and boiling water and stir well. Cover and simmer for 15 minutes.Meanwhile, cook the pasta.
Remove lid, add the sweetcorn and simmer for 5 more minutes.
Remove from the heat and stir in the Quark.Drain the pasta and return to the pan. Pour the sauce over and mix thoroughly.
Transfer to an ovenproof dish and top with grated cheese.Bake at Gas Mark 6 (180 degrees) for around 25 minutes, or until the cheese is golden.
If you want to up the veg content, you could add small pieces of broccoli, mushrooms or courgette. If you like your food spicy, try adding a teaspoon of paprika and a few chilli flakes when the sauce is cooking.
This makes plenty, so you could remove some of the sauce before adding the quark and pasta, and freeze it to use another time.
